Farm & Dairy

What you eat, we raise 1.5 km away.

Alpine goats, vineyards, olive groves and a dairy that supplies the kitchen every day.

The farm

A farm that feeds a restaurant.

The farm sits 1.5 km from the restaurant, in the hills to the east. There we keep around 140 French Alpine goats, farm chickens, geese, ducks and rabbits.

The milk goes straight to the dairy, where we make white cheese, yoghurt, butter and curd. What you eat at the table was made the same week.

On the land

The vineyards

Two hundred thousand square metres of vines on the eastern hills. Cabernet and Merlot for the house wine; Shesh and Muskat, two native varieties, for the raki.

The harvest is in September, the best month of the year here.

The Alpine goats

Around 140 French Alpine goats. The kids arrive in March, and that is when the milk is at its best.

The dairy

White cheese, yoghurt, butter and curd, made every week from our own milk. Nothing travels more than 1.5 km.

The olive groves

Our olive oil comes from our own trees. Picking is in November, and the first oil of the year goes straight to the table.
